Steel, Taken a Step Further - The backbone of the EPICURE knife is the single unit consisting of blade, bolster and shank - made of one piece of high-alloy X50CrMoV15. The excellent qualities of the steel make a significant contribution to the sharpness and long service life which then receive a new dimension from the forging and subsequent hardening process. Proudly 58°HRC. EPICURE knives feature a hardness that guaranteed both the highest degree of initial sharpness and long cutting ability as well as a flexibility and easy resharpening.
Made to Measure Sharpness - We have developed the PTec sharpening process to give every blade the greatest possible initial sharpness. As a result, the blades are measured piece by piece with a laser before grinding. This step ensures that even the slightest tolerances in the thickness of the blank are taken into consideration for sharpening. Every single blade is given the ideal sharpening angle of 15° and can therefore meet the exacting WUSTHOF standard.
Considered to the Smallest Detail - Every blade is designed without the exception to have a wider shape, exerting more weight on the item being cut and thereby working with much greater efficiency. At the same time, it guarantees you increased safety and noticeably improved ease of use; the wider contact surface offers not only better control when guiding the knife, but also helps transport food to the pot quickly and cleanly.
